Create a creamy and flavourful egg salad with just a few simple ingredients. This protein-rich, easy recipe is a must-have for quick meals, perfect for sandwiches or as a side dish.
8 large eggs ½ cup mayonnaise ¼ cup chopped green onion 1 tsp prepared yellow mustard ¼ tsp paprika Salt and pepper to taste
Place eggs in a saucepan and cover them with cold water. Bring water to a boil, then immediately remove the pan from heat.
Cover the saucepan and let the eggs stand in hot water for 10 to 12 minutes. Remove the eggs from hot water, cool them, then peel and chop.
In a bowl, stir together the chopped eggs, mayonnaise, green onion, and mustard.
Season the mixture with paprika, salt, and pepper. Serve the egg salad on bread, crackers, or salad greens for a quick meal.
