Homemade Kaju Katli is a traditional Indian sweet made from cashews, sugar, and a hint of rose. This delightful, melt-in-your-mouth treat is perfect for celebrations and makes a thoughtful gift for loved ones.
1 cup (160g) cashews (whole) ½ cup (100g) sugar 5 tbsp water 1 tbsp ghee, coconut oil, or neutral oil (optional) 1 tsp chopped rose petals or rose water (optional)
Grind the cashews to a smooth powder without releasing the fat.
Heat sugar and water on low flame until the sugar dissolves completely.
Add cashew powder to the sugar syrup and stir continuously. Cook the mixture until it thickens and forms a dough.
Remove the dough, add rose petals and ghee, and knead lightly.
Roll the dough between butter paper to a 3-5 mm thickness. Once cool, cut into squares or diamonds and serve or store.
