Homemade banana pancakes are a healthy and tasty breakfast option. This simple recipe combines ripe bananas, eggs, and flour for a fluffy texture. Enjoy them fresh, warm, and full of natural sweetness!
2 ripe bananas 4 large eggs ½ cup whole wheat or buckwheat flour, or ⅔ cup oat flour ½ tsp ground cinnamon (optional) 2 tbsp hemp hearts or ground flaxseed (optional) ¼ tsp salt (optional) Butter, avocado oil, or ghee for cooking
Mash the bananas in a bowl until smooth. Add the eggs to the mashed bananas and whisk until well combined.
Gently stir in the flour and optional boosters until the batter is smooth.
Preheat the skillet over medium-low heat until water sizzles on contact.
Scoop ¼ cup of batter onto the skillet, leaving space between each pancake.
Cook for 2-3 minutes until bubbles form, then flip and cook another 1-2 minutes.
Serve the pancakes hot and enjoy, or store leftovers for up to 3 days!
