Enjoy a refreshing and hearty winter-special chicken salad that combines tender chicken with crisp vegetables, sweet preserves, and a tangy dressing, perfect for cosy nights and seasonal gatherings.
500 gms chicken breast, cut in chunks or 2-3 cups cooked 2 celery ribs, chopped 1/2 red bell pepper, chopped 4-6 green olives, minced 1/4 cup red onion, chopped 1/2 to 1 apple, chopped 1/3 head iceberg lettuce, chopped 5 tbsp mayonnaise 1 tbsp plum preserves or berry preserves 2 tsp lemon juice, fresh Salt and pepper to taste
If using raw chicken, bring salted water to a boil and poach chicken chunks.
Combine mayonnaise, preserves, and lemon juice in a large bowl. Adjust sweetness and acidity as needed.
Add salt and pepper to the dressing for seasoning. Mix in chopped celery, bell pepper, olives, red onion, and apple with the dressing.
Dice the cooked chicken, then add it to the vegetable mixture.
When ready to serve, fold in the chopped iceberg lettuce and enjoy your winter-special chicken salad!
