Chhanar Jilipi, a beloved Bengali sweet, is perfect for adding sweetness to the festive celebrations. Made with fresh cottage cheese, semolina, and flour, it's deep-fried, soaked in syrup, and enjoyed by families during this festive season.
600 ml Cow's Milk 1 Lemon 2 tbsp All-Purpose Flour 1 tbsp Semolina ½ tsp Baking Soda 4 tbsp Milk 1 tsp Ghee Ghee or Oil (for frying) 1 cup Sugar 1 cup Water 1 Green Cardamom Pod
Boil the milk and curdle it using lemon juice to make cottage cheese.
Strain the curdled milk with a cheesecloth and remove excess moisture.
Knead the cottage cheese for 8-10 minutes to make a smooth dough.
Add flour, semolina, baking soda, and milk to the dough and mix thoroughly. Form the dough into 7cm long shapes and twist them into an ‘8’ knot.
Fry the shaped dough in ghee or oil on low heat until golden brown.
Soak the fried Chhanar Jilipi in sugar syrup for an hour before serving.
