Hing Kachori is a crispy, deep-fried Indian snack, filled with a spicy, aromatic lentil mixture. This savoury delight is perfect for any occasion and pairs wonderfully with Aloo Cholar Daal.
400gms All Purpose Flour Salt to taste 2 tbsp Vegetable Oil or Ghee 1 cup Urad Daal (Black Gram) 2-3 Green Chillies ½ tbsp Ginger Paste ½ tsp Asafoetida (Hing) 1 tbsp Fennel Seeds (soaked) 1 tbsp Mustard Oil
Soak the urad daal overnight or for at least 8 hours with a pinch of salt.
Grind the soaked daal with green chillies, ginger paste, salt, and fennel seeds into a smooth paste.
Heat mustard oil, temper with asafoetida, and sauté the daal paste until dry and sticky.
Mix flour, salt, and oil, knead with lukewarm water to make a non-sticky dough, and let it rest.
Divide the dough and stuffing into 20 portions, flatten a dough ball, and seal with the stuffing.
Roll each stuffed ball into a 3-inch disk and deep fry in hot oil until golden brown.
