This aromatic prawn congee is sure to fill up your house with the most amazing smells as it cooks. Eat this bowl of congee when you’re under the weather or you’re craving for something warm and comforting that is also low-effort.
10-12 medium prawns, cleaned ¼ cup rice 2 cups water 1 chicken stock cube 4 cloves garlic, sliced 3 coriander stems 6-7 whole black peppercorns 2 teaspoons soy sauce 1 tablespoon vegetable oil Salt, to taste
Wash and add the rice to a pressure cooker along with the water.
Crumble the stock cube and stir to dissolve before pressure cooking the mixture until it turns mushy.
Crush the garlic, coriander stems and black pepper using a mortar and pestle to a paste.
Use half the paste to marinate the prawns for five minutes.
Once the rice is cooked, add the soy sauce, remaining paste and season with salt.
Heat the oil and cook the prawns until they curl up and turn opaque.
Add the prawns to the congee and cook for another couple of minutes before serving warm.
