A simple yet sublime soup made with prawns, coconut milk and other ingredients used in Kerala cuisine, this Prawn Coconut Soup should be on your winter indulgence list. Here is the recipe you can try.

500g prawns 1 cup onion paste 1 tsp ginger-garlic paste 2 tbsp oil ½ tsp mustard seeds 1 tsp black peppercorns 2 sprigs curry leaves 1 tsp red chilli powder ½ tsp coriander powder 1 cup coconut milk 2 cups fish stock Salt to taste Coriander leaves, to garnish Lemon, to garnish

Heat oil in a pot, then add mustard seeds, black peppercorns, curry leaves and let them splutter.
Add the onion paste and ginger-garlic paste, and saute until the raw smell dissipates.

Now add the prawns, red chilli, coriander powder, salt and saute for 5 minutes.

Add in the coconut milk, fish stock and simmer for 20 minutes until the soup is ready.

Adjust the salt and serve the soup with coriander leaves and lemon wedges.
