Spinning the classic gold rush cocktail on its head, this whiskey-based drink is easy, tasty and light on the palette, making it perfect to sip on through the evening.
60 ml Irish whiskey 30 ml fresh lemon juice 15 ml honey syrup ½ teaspoon edible gold glitter Fresh mint, to garnish
Add the whiskey, lemon juice and syrup to a cocktail shaker filled with ice and mix well.
Strain and pour into a glass of your choice and add the edible glitter and stir lightly.
Garnish with a sprig or two of fresh mint and serve chilled.
