Pol Roti is a famous stuffed flatbread of Sri Lanka. It is almost like a stuffed paratha, however, the stuffing is that of coconut. Here’s how you can make it at home.
1 cup shredded coconut 3 cup flour 1 chopped onion 2 chopped green chillies 2 tbsp oil Salt- as required Lukewarm Water- as required
In a bowl take shredded coconut, flour, onion, green chillies, oil and gradually add water in order to form a dough.
Grease the bowl with oil and let the dough sit for 15 minutes.
Divide the dough into 4 portions and make small balls out of them
Roll the balls flat using a rolling pin. Heat a pan and grease with oil. Cook the pol roti on both sides, until brown and crisp.
