Don’t have any vegetable in the refrigerator? Prepare this simple and quick curry. Made with besan, onion, chillies, spices and curry leaves, it is perfect to relish with rice, jowar roti, bhakri as well as roti.

1 cup besan, 1 cup water, 1 medium onion finely chopped, 2-3 small green chilies, 1 tablespoon oil, ¼ teaspoon mustard seeds, ¼ teaspoon cumin, 4-5 curry leaves, ½ teaspoon red chili powder, ¼ teaspoon turmeric powder, ¼ teaspoon coriander powder, fresh coriander for garnishing

Heat oil in kadai. Add mustard seeds and cumin. When the seeds splutter, add curry leaves, onion and green chilli. Saute it for a while.

Add red chilli powder, turmeric powder, coriander powder and salt followed by water.

Allow it to boil. Then add besan and stir it continuously.

Simmer the mixture for 3-4 mins. Serve hot with bhakhri, rice or jowar roti.
