Alu Kulcha is a popular Indian flatbread, stuffed with spiced mashed potatoes. Soft inside and crispy on the outside, it’s perfect when served with curries like chole or pickles.
1 cup whole wheat flour 1 cup all-purpose flour ¼ tsp baking soda 3 tsp oil or ghee 2 tbsp curd 1 tsp sugar ¾-1 tsp salt ½ tsp red chilli powder ½ tsp garam masala 2 tbsp chopped coriander leaves 3 large potatoes 1 tsp chopped green chillies Oil or ghee for roasting
Mix the flour, baking soda, sugar, salt, curd, and oil in a bowl. Add water gradually and knead into a smooth, pliable dough. Set aside for 2 hours.
Boil and mash the potatoes. Mix in spices, green chillies, and coriander leaves.
Make medium dough balls. Roll them into small discs and place potato stuffing in the centre.
Fold the edges, pinch to seal, and gently roll again into a larger disc.
Cook the kulcha in a hot skillet, flipping it and brushing it with oil or ghee until golden.
