Dahi Bhindi, a delicious yoghurt-based curry with tender okra, is a delightful and healthy dish. Follow these simple steps to prepare this mouth-watering recipe at home.
½ onion, sliced 1 inch ginger, roughly chopped 2 cloves garlic Oil, as required 10 bhindi (okra), chopped ¾ tsp mustard seeds ¼ tsp fenugreek seeds (optional) ¾ tsp cumin seeds
Pinch asafoetida Few curry leaves 1-2 tsp Kashmiri chilli powder ½ tsp turmeric powder 1 cup thick curd (yoghurt), whisked ½ tsp coriander powder ¼ cup water Few coriander leaves, chopped ¼ tsp garam masala
Fry onions, ginger, and garlic in 2 tsp oil until golden. Blend with water to make a smooth paste.
Fry chopped bhindi in 2 tsp oil until dark green. Heat 1 tsp oil and add mustard seeds, cumin, fenugreek, asafoetida, and curry leaves.
In the same pan, add onion paste, and sauté for a minute. Add chilli powder, turmeric, coriander powder, and salt, and fry on low flame.
Stir in water, then add whisked curd, and mix well.
Add fried bhindi, mix, and cook covered for 5 minutes. Garnish with coriander leaves and garam masala.
