Peel the pears and cut them into small pieces. Transfer them to a blender to make a smooth puree.
Boil pear puree, water, honey and sage in a saucepan. Reduce heat and cook for 4-5 minutes. Remove the saucepan from heat and let it come to room temperature.

Now, strain the pear syrup through a sieve to separate the remaining solid materials.
For the cocktail, pour bourbon and 2 tablespoons of pear sage syrup into a tall glass and stir.

Then add soda and a glass of cider to the glass and stir. Add ice to a glass, sprinkle with cinnamon and brown sugar.
Serve garnished with sliced pear and sage leaves.
