A simple mild, creamy, and nut-based chutney that is typically served for breakfast recipes like dosa and idli. It is typically prepared just with roasted peanuts or groundnuts. The recipe is known for its longer shelf life due to no coconut used in its preparation. Here is the recipe for Peanut Chutney.

FOR PEANUT CHUTNEY: ½ cup roasted peanuts 2 tsp oil 2 tbsp urad dal 2 tbsp chana dal 3 dried red chilli 2 tomato, sliced ½ tsp salt ½ cup water FOR TEMPERING: 2 tsp oil 1 tsp mustard ½ tsp urad dal 1 dried red chilli, broken Few curry leaves
In a pan heat oil and add urad dal, chana dal and dried red chilli. Roast until the chilli puffs up and dal turns golden brown. Further, add roasted peanuts and roast for a minute. Also, add tomatoes and saute until the tomato turns soft and mushy.

Cool completely, and transfer to the mixer jar. Add ½ tsp salt and ½ cup water. Grind to smooth paste adding water if required.

To prepare the tempering, heat oil and splutter mustard, urad dal, dried red chilli and a few curry leaves. Pour the tempering over the chutney and mix well. Finally, peanut chutney is ready to serve with idli and dosa.
