Combine fresh, juicy peaches available in plenty during the monsoon season, with tangy tomatoes to make this sweet-spicy chutney to be eaten with parathas, puris, wraps and more.
250 grams fresh peaches, chopped 250 grams tomatoes, chopped 2 onions, chopped 1 cup vinegar 2 teaspoons mustard seeds 1 teaspoon cumin powder 2 teaspoons red chilli flakes 250 grams sugar Salt and pepper, to taste
Add the chopped peaches, tomatoes, onions and vinegar to a saucepan and bring to a simmer.
Stir in the remaining ingredients and combine thoroughly.
Allow the mixture to cook on a low heat for 30-35 minutes, until it begins to turn thick and glossy.
Cool completely before transferring to a sterilised jar and refrigerating for up to 2 months.
