Pea & Mint Soup To Make A Light And Comforting Lunch

The nursery sweetness of green peas combined with herby notes of mint are a classic combination which taste even better in soup form. This blender soup recipe, which is best enjoyed alongside some flatbread or a piece of garlic toast, is perfect for when you don’t want to eat a heavy meal.

INGREDIENTS

2 tablespoons butter 1 onion, chopped 3 cloves garlic, minced 4 cups hot water 1 vegetable stock cube 4 cups frozen peas ½ cup fresh mint leaves Salt and pepper, to taste 1 tablespoon Greek yoghurt/fresh cream

STEP 1

Heat the butter in a saucepan and sauté the onions, garlic and peas for 3-4 minutes.

STEP 2

Crumble in the stock cube, followed by half of the hot water and simmer for 5 minutes.

STEP 3

Cool completely before blending into a smooth liquid and transferring back to the pan.

Add the remaining water and mix well before seasoning with salt and pepper.

Simmer for 5-7 minutes, turn off the heat and finish with Greek yoghurt or fresh cream.
