Paryushan is a ten-day Jain festival. It is the most important time of the year for Jains and there are certain dietary restrictions that need to be followed. Here is a home-made paneer recipe by Neha Deepak Shah which is paryushan friendly.

This is just a 2 ingredient recipe. All you need is 2 litres Milk and 4 - 5 tbsp Curd. No use of lemon or vinegar as you cannot have that in paryushan.

Bring the milk to a boil. Then, take it off the flame. Mix curd with water in small batches.

Add the curd to the milk in small batches so that the milk curdles fully.

Take the chhena out, wash it in a muslin cloth. Keep it pressed under weight for 20 mins and the paneer is ready.
