Paryushan 2023: Podi Idli To Relish With Your Favorite Meals

Indulge in the delightful world of Idli Podi, a flavorful South Indian spice blend that elevates your favorite idlis and dosas to new heights of taste. 

Step 1 

Roast 1 cup urad dal, 1/2 cup chana dal, and 10-12 dried red chilies until golden. 

Step 2 

Add 1 tsp hing, 1/2 tsp peppercorns, and curry leaves; roast briefly. 

Step 3 

Let it cool, then grind to a coarse powder. 

Step 4

In a pan, heat 2 tbsp sesame oil, add 1/2 tsp mustard seeds and 1/2 tsp cumin seeds. 

Step 5

Add the powdered mixture, salt, and 1 tsp jaggery; mix well. Cool, store in an airtight container, and serve with idlis or dosas.
