Paruppu Podi: A Savoury Condiment To Eat With Ghee-Rice

A finely ground, protein-packed powder made with roasted lentils, the paruppu podi is a delicious pantry condiment that can be paired with your plate of rice, when you don’t have the time to cook a full meal.

INGREDIENTS

1 cup toor dal ½ cup roasted gram 4 red chillies 7 Kashmiri red chillies 3 cloves garlic 1 pinch asafoetida 1 teaspoon black peppercorns 1 teaspoon ghee 8-10 curry leaves Salt, to taste

METHOD

Heat the ghee in a pan and toast the lentils and chillies on a low flame, until aromatic and deepened in colour.

Set aside to cool completely and transfer to a blender jar, along with the rest of the ingredients.

Grind into a fine powder and transfer to a dry, air-tight jar. Store for up to 3-4 weeks.
