A savoury breakfast recipe made with eggs and crunchy potato matchsticks, this classic Parsi preparation is perfect for every occasion – from brunch to recovering from a hangover.

2 eggs 1 cup potato matchsticks 1 tomato, chopped 1 small onion, chopped 2 green chillies, chopped 1 teaspoon black pepper powder 2 tablespoons fresh coriander, chopped 1 tablespoon ghee Salt, to taste

Heat the ghee in a pan and sauté the onions and green chillies for 3-4 minutes.

Add the chopped tomatoes and season with salt and pepper.

Cook until the tomatoes are soft and mushy before making two wells in the sauce with the back of your spoon.

Crack the eggs in these wells and allow it to steam on a low flame until the whites are set.

Season the eggs with some more salt and pepper and sprinkle the chopped coriander generously on top.

Line a serving plate with potato matchsticks and top up with the egg and tomato mixture.
