Parsi New Year which falls on August 16 is also known as the festival of Navroz or Nowruz. Derived from the Persian words ‘Nav’ and ‘Roz’ which literally translates to ‘new day,’ Persi new year is believed to be observed by the Iranians and Zoroastrians for the past 3,000 years. This year, celebrate the new year with Parsi Sev.
200 gms vermicelli 1 ½ cup sugar 2 cups desi ghee ½ cup almond (slivered) ½ cup raisins 1 tsp vanilla essence ½ tsp nutmeg powder ½ tsp green cardamom
Heat the ghee in a large pan and add all the vermicelli. Fry them until golden brown colour. Keep stirring always.

In a separate bowl, mix sugar and water. Put this mixture to boil on medium flame.

Add sugar and water mix to vermicelli. Put the flame on high range and cover and cook.

After 2-3 minutes, check if the water is absorbed and the vermicelli is cooked properly. Note, if the water is not absorbed and the vermicelli is still a bit raw, reduce the heat to allow it to cook, but not soggy.

When completely cooked, add rose water, nutmeg and cardamom powder.
