An Italian-style salad that uses minimal, easily available ingredients as well as crunchy croutons for texture, this panzanella is loaded with flavours from fresh basil. Eat this as a side to your meal, or make a large bowl to eat as it is for a light lunch or dinner.
2 medium tomatoes, diced ½ onion, sliced 1 cucumber, diced 4 slices bread 3 tablespoons olive oil 2 sprigs basil, chopped 1 teaspoon dried oregano Juice of ½ lemon ¼ cup bocconcini balls 1 teaspoon honey Salt and pepper, to taste
Combine the tomatoes, onion, cucumber, bocconcini and basil in a large bowl while you drizzle a tablespoon of olive oil on the bread slices before toasting to a crisp.
Cut them into bite-sized cubes and set aside before combining the remaining ingredients to make a dressing.
Add the toasted croutons and dressing to the vegetables before tossing well. Serve immediately.
