A monsoon-special Bengali dish, this one requires minimal ingredients and effort. And yet, Panikhola Ilish or Sada Ilish is a delicacy from Bengali cuisine that you simply shouldn’t miss.
4 nos. Hilsa pieces ½ cup white onions, finely sliced 5 green chillies, slit Salt, to taste 4 tbsp mustard oil 1 cup water

Place the onions, green chillies, salt in a large bowl and rub well for 10 minutes or until the onions turn translucent.
Now place the mixture in a pan with the Hilsa fish pieces on top. Cover and cook on a low heat for 10 minutes.
Now add the water, mustard oil and adjust the salt. Cover and cook for 7-8 minutes more or until the Hilsa is fully cooked.
