Panchakattu dosa, also referred to as ghee karam dosa, is a delicious addition to the South Indian spread at home. Loaded with ghee and red chutney (erra karam), it is a must-try for everyone looking to make traditional dosa with a twist. Here is the recipe.
6 garlic cloves ½ cup fried gram dal 1 chopped onion ½ teaspoon cumin seeds 7-8 dry red chillies Salt to taste 3-4 cups fresh dosa batter
Soak red chillies in warm water for at least 20 minutes and add them to a blender along with onion, salt to taste, and cumin seeds.
Blend the ingredients and keep them aside. In another jar, blend chana dal, garlic, and salt to taste to make pappula podi with a powder-like consistency.
Heat a dosa pan and pour the batter. Spread the batter until you achieve thin edges.
Add a dollop of ghee to the dosa and spread erra karam chutney on the surface.
Sprinkle pappula podi all over the dosa and let it cook until the base turns golden brown and crispy.
Serve panchkattu dosa hot with sambar and chutney.
