Panch Phoron: The Aromatic Mix For Vibrant Delicacies

By Aanchal Mathur

Also known as Panch masala, Padkaune masala, or Panch phutana, is a fragrant spice mix from Eastern Indian cuisine.

This five-spice mixture is an important spice blend in Bengali cuisine. 'Panch' means five while 'phoron' indicates tempering in Bengali.

It is used as a seasoning in foods such as khichuri, egg curry, fish curry, and various vegetable preparations.

The spice mix not only improves the flavour of a dish but also improves overall health.

Ingredients

25 gm cumin seeds 25 gm mustard seeds 25 gm fenugreek seeds 25 gm fennel seeds 25 gm nigella seeds

Mix the spices together in a bowl and store in an airtight jar.

Alternatively, you can also dry roast them and powder them. Use the mixture in place of garam masala.
