Palak Shorba is a warm, nourishing soup made from fresh spinach and subtle spices. This vibrant green soup is not only delicious but also packed with nutrients, making it perfect wholesome meal for chilly winter evenings.
2 cups fresh spinach leaves (palak) 1 onion 1 tomato 1-inch piece of ginger 2-3 garlic cloves 1 green chilli 1 tsp cumin seeds
1/2 tsp black pepper powder 1/4 tsp garam masala 1 tbsp ghee or oil 2 cups water or vegetable broth Fresh cream Lemon juice Salt
In a deep pan, heat the ghee or oil. Add cumin seeds and let them splutter. Add chopped ginger, garlic, and green chili, and sauté.
Add the chopped onion and sauté until translucent. Add the chopped tomato and cook until soft. Add the chopped spinach leaves and cook for 3-4 minutes.
Let the mixture cool slightly. Transfer it to a blender with some water and blend until smooth.
Pour the blended mixture back into the pan. Add the remaining water or vegetable broth, salt, black pepper, and garam masala. Simmer for 5-7 minutes.
Adjust salt, add lemon juice to taste, and serve hot. Garnish with a swirl of fresh cream if desired.
