Healthy and delicious, this spinach-loaded rice is full of flavour and tasty health benefits too. It’s a great nutritious option for winter dinners.

2 cups basmati rice 450 gms spinach 1 tablespoon cooking oil 1 teaspoon cumin seeds 1 bay leaf 1 cinnamon stick 2-3 cloves 2-3 green chillies 1 tablespoon ginger paste 8-10 cloves garlic

1 onion 2 tomatoes ¼ cup green peas Salt to taste 2-3 tablespoons cilantro, chopped 1.5 cups water 1 tablespoon lemon juice

Rinse basmati rice under running water and soak for 15-20 minutes before cooking, whether using an Instant Pot or stovetop.

Cook rice in a rice cooker, adding bay leaf, cinnamon stick, and cloves to infuse their flavours. Alternatively, use leftover rice.

Blanch the spinach and prepare a puree. Heat oil in a pan, temper cumin seeds, then add minced green chillies, onions, garlic, and ginger. Saute until onions become translucent.

Add tomatoes and green peas, sautéing until the tomatoes become soft and pulpy.

Add the spinach puree, along with salt, and fry for a minute. Finally, add the cooked rice, discard the whole spices, and mix everything together. Garnish with lemon juice and chopped cilantro.
