Spinach dal is a healthy dish loaded with protein, vitamins, and minerals. It pairs well with rice and makes for a delicious meal. If you are tired of an old recipe, you can prepare the dish with a South Indian twist. It is called palak pappu.
1.5 cups water ½ cup moong dal ¼ teaspoon cumin and mustard seeds ¼ teaspoon turmeric and asafoetida Salt to taste 4-6 cloves of garlic 7-8 spring leaves 2-3 green and dried red chillies 1 teaspoon coriander 1 teaspoon sambar powder 1 teaspoon ghee 1 chopped onion 1 chopped tomato 3 cups spinach
Add soaked moong dal to the pressure cooker and sprinkle turmeric powder and salt to taste. Wait for two whistles to blow off.
Heat oil in another pan and let mustard and cumin seeds crackle. Add dried red chillies, green chillies, curry leaves, and asafoetida as well.
Add chopped onion and saute. Once onions become translucent, add tomatoes and garlic. Let the ingredients cook for 5-8 minutes on low flame.
Add chopped palak to the mix and the remaining spices as well. Sprinkle some water, and close the lid for spices to roast for 5 minutes.
Pour the cooked dal into the pan and let it simmer on a medium flame for 5-8 minutes.
Serve palak pappu or spinach dal with a dollop of ghee along with rice and roti.
