Made with spinach, gram flour and spices, this fritter is perfect to enjoy with your evening tea. Here is an easy recipe to make palak pakora at home.

12-16 spinach leaves, 1 cup gram flour, ¼ tsp carom seeds, 1/4 tsp turmeric powder, 1/4 tsp red chilli powder, 1/4 tsp asafoetida, salt to taste, oil for deep-frying, date and tamarind chutney to serve, garlic chutney to serve

Heat oil in a kadai. Take gram flour in a bowl, add carom seeds, turmeric powder, chilli powder, asafoetida, salt and water. Whisk well to make a smooth batter.

Dip each spinach leaf in the batter, shake off excess batter and slide into the hot oil. Deep fry till golden and crisp.

Drain on absorbent paper. Arrange them on a serving platter and serve hot with date and tamarind chutney and garlic chutney.
