For Dosa batter: 3 cup rice 1 cup urad dal 1 cup spinach leaves (palak), blanched and pureed Salt to taste For Soya Paneer Stuffing: 1 cup soya paneer, crumbled 1 onion, finely chopped 1 tomato, finely chopped 2 green chilies, finely chopped
1 boiled mashed potato 1/2 tsp cumin seeds 1/2 tsp turmeric powder 1/2 tsp red chili powder 1 tsp MTR sambhar masala Salt to taste Butter/oil for cooking dosa Fresh coriander leaves, chopped for garnish
Soak rice and urad dal separately and grind them separately to make a smooth batter. Mix the batters and add salt. Allow it to ferment overnight.
Heat butter/oil and add cumin seeds in a pan. Once they splutter, add chopped onions and sauté until golden brown. Add chopped tomatoes and cook.
