In summer, kadhi is the ultimate comfort food when paired with roti or rice. It is quick to make and requires the least amount of effort and time in the kitchen. Here is a quick recipe for you.
2 tablespoons oil 2 tablespoons besan ¼ teaspoon turmeric powder ½ cup yoghurt ¼ teaspoon cumin seeds ¼ teaspoon red chilli powder 6-8 curry leaves 1 cup spinach leaves ¼ teaspoon fenugreek seeds ⅛ teaspoon hing Salt to taste 2-3 dry red chillies
Take a deep bowl and mix besan or gram flour, curd, and water. Make sure the concoction is free from lumps.
Heat a kadhai, add some oil and cumin seeds. Once cumin seeds start to crack, add hing and curry leaves.
Add turmeric powder, fenugreek seeds, and red chillies. Pour the gram flour mixture and let it cook.
Keep stirring in between to ensure lumps do not form. Once kadhi starts to thicken, add chopped spinach to it.
Add red chilli powder and salt to taste. Cover the kadhi and let it cook. For another 15 minutes.
Adjust the consistency by adding more water and temper it with mustard seeds, curry leaves, and red chillies before serving with rice or roti.
