Pakhala Bhata: Odisha's Famous Fermented Rice Dish

One of the simplest and tastiest dishes from Odia cuisine is Pakhala Bhata, a dish in which rice is fermented before the meal. It is a must-have in humid and hot weather as it keeps the body cool. Here is a quick recipe for you to try out.

Ingredients

1 cup curd 7-8 curry leaves 2 cups cooked rice 3 cups water ½ tsp mustard seeds 1 tsp ginger 2 dry red chillies Salt to taste 1 tbsp oil

Step 1

After preparing the rice, keep it aside to cool off at room temperature.

Step 2

Take a deep bowl, preferably an earthen pot, and mix cooked rice and water.

Step 3

Let the grains ferment overnight. Next morning add curd or buttermilk and keep the pot aside for a few hours.

Step 4

Prepare the tempering of oil, mustard seeds, red chillies, ginger, and curry leaves.

Step 5

You can chop the garlic and green chillies and cook them with the tempering.

Step 6

After mixing the tempering with rice, serve the dish and enjoy.
