Paani wala achaar is an integral component of Marwari cuisine, where its tart and spicy flavours elevate otherwise simple staples.
Take 1 large size Raw mango wash, peel and cut into small pieces.
Now Boil 300 ml water Approx 1 glass and let this cool down completely and then add 1 tbsp Yellow mustard seeds (roughly grinded), 1 tsp Fennel seeds (sauf), big pinch of Hing, 1 tbsp Salt, pinch of turmeric powder (haldi) and Pinch of Red chilli powder (Lal mirchi). mix it.
Add the chopped raw mangoes and give it a good mix.
Keep in Sun for a day and then one day on kitchen countertop. Keep this in the fridge the next day and then you can start eating this.
You can have it along with dal chawal, khichdi, Roti sabzi or as it is.
