Oyster Mushroom Fried Rice: A Quick Fix For Lunch

This flavour-packed umami fried rice celebrates oyster mushrooms in the best way possible and is also a creative way to use up leftover rice and bits of vegetables in your fridge.

INGREDIENTS

1 cup leftover cooked rice 2 tablespoons ghee 1 onion, sliced 4 cloves garlic, chopped 125 grams oyster mushrooms, diced 2 jalapenos, chopped 2 tablespoons chives, chopped 1 teaspoon white pepper 1 teaspoon soy sauce Salt, to taste

METHOD

Heat the ghee in a pan and add the chopped garlic and onions.

Sauté for 4-5 minutes, until the onions are browned before adding the oyster mushrooms.

METHOD

Cook the mushrooms on a high heat until they start to brown and release their moisture before adding the soy sauce and jalapeno.

METHOD

Toss everything to combine before tipping in the leftover rice and mixing thoroughly.

METHOD

Season with salt and white pepper and sprinkle a generous helping of chives and serve warm.
