A simple and delicious salad with mild sweet undertones from the winter produce of oranges and beetroot, this colourful salad is the key to good health in this season. The contrast of sweet-earthy flavours with sweet-tangy flavours is sure to make this one an addictive recipe.

4 small beetroot 2 oranges, peeled 2 cups baby spinach, washed ¼ cup walnuts, chopped ¼ cup feta cheese

3 tablespoons olive oil 2 tablespoons orange juice 1 tablespoon vinegar 1 tablespoon Dijon mustard Salt and pepper, to taste

Wash and wipe the beetroot dry before drizzling with olive oil and roasting in an oven for 25-30 minutes at 170°C.

Cool slightly before peeling and slicing thinly and arranging on a plate lined with baby spinach.

Slice the peeled oranges into roundels and discard the seeds from the pulp, if any.

Arrange on top of the beetroot-spinach bed and sprinkle the walnuts and feta cheese on top.

Whisk together all the ingredients of the dressing and pour over the waiting salad. Serve warm.
