One Pot Vegetarian Biryani For A Quick And Easy Lunch

Ingredients

1 cup Basmati rice Vegetables (carrots, peas, beans) - 1 cup 1 large onion, thinly sliced 2 tomatoes, chopped 2 cloves garlic, minced 1-inch piece of ginger, grated 1/4 cup plain yogurt 2 teaspoons biryani masala 1/2 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1 cinnamon stick, 2-3 cloves, 2-3 green cardamom pods 2 tablespoons ghee or oil Salt to taste Fresh coriander leaves

Step 1

In a large pot, heat ghee. Add whole spices, sliced onions, ginger, and garlic. Sauté until onions turn golden. Then, add vegetables and cook for a few minutes.

Step 2

Add chopped tomatoes, biryani masala, turmeric, and red chilli powder. Cook until tomatoes soften. Then, stir in yoghurt and cook for 2 minutes.

Step 3

Add rice, salt, and 2 cups of water. Bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked. Garnish with cilantro.
