Filling, nutritious and delicious, this South Indian Thengai Sadam or coconut rice is the easiest dish you can prepare for a quick meal. Here is the recipe you need

2 cups leftover cooked rice 1 cup coconut, grated 2 tbsp coconut oil 1 tsp mustard seeds ½ tsp urad dal ½ tbsp chana dal 5-6 cashews, chopped 10 peanuts 2 dry red chillies 2 green chillies, chopped ¼ tsp asafoetida 1 sprig curry leaves Salt, to taste

Heat the oil in a wok and add mustard seeds, asafoetida, urad dal, chana dal, dry red chillies and curry leaves.

Once these stop spluttering, add the peanuts, cashews and green chillies. Saute until golden.

Now add the grated coconut and fry it with the tempering until lightly golden.

Add the leftover rice, add salt and mix well. Cook for 5 minutes, then serve the Thengai Sadam.
