This delicious, mellow-flavoured mutton stew is the ultimate comfort food bowl you can build with some steamed rice or noodles as an accompaniment, for something that is easy, meaty and lush with flavour.
500 grams mutton, bone-in 2 onions, sliced 1-inch piece ginger 6 cloves garlic 3 green chillies, slit 2 potatoes, cubed 1 tablespoon crushed black pepper Juice of 1 lemon 3 tablespoons coriander 1 tablespoon ghee Salt, to taste
Smash the ginger and garlic into a coarse paste and set aside.
Heat the ghee in a pressure cooker and add the sliced onions to fry for 4 minutes, until lightly browned.
Add the ginger-garlic paste, chillies and toss everything until aromatic.
Tip in the mutton and mix well, to let the flavours intermingle and for the mutton to sear lightly on the outside.
Pour two cups of water, season with salt and pressure cook for 5 whistles.
Remove the lid and add the potatoes, black pepper and pressure cook for 2 more whistles.
Serve hot with rice, noodles or appams.
