Also known as cracked wheat, dalia is a fibre and nutrient-dense carbohydrate source which is excellent to incorporate in one’s daily diet. Enjoy it in this avatar – where it is flavoured with vegetables and spices, for a quick and easy dinner that you can eat with a cup of yoghurt.
1 cup dalia, washed 1 onion, finely chopped 1 carrot, diced 5-6 green beans, diced 1 tomato, finely chopped 1 teaspoon ginger-garlic paste 2 green chillies, chopped 1 teaspoon cumin seeds 1 teaspoon red chilli powder 1 teaspoon turmeric powder ¼ teaspoon garam masala 1 bay leaf 1-inch cinnamon stick 2 cloves 2 tablespoons ghee Salt, to taste 2 cups water 1 tablespoon freshly chopped coriander
Heat the ghee in a pressure cooker and bloom the whole spices before adding the onion to sauté until translucent.
Add the ginger-garlic paste and cook for a minute before adding in the tomatoes along with some salt.
Cook the mixture until the tomatoes begin to soften slightly, before adding the spice powders followed by the vegetables.
Toss everything well to combine and add the water, adjusting seasoning as necessary.
Add the dalia and bring the mixture to a boil before reducing the flame and allowing it to cook for 3-4 whistles.
Rest for 10 minutes before using a fork to fluff up the pulao. Serve hot.
