2 cups mixed mushrooms, chopped 2 tablespoons minced garlic 300 grams pasta of choice, cooked 2 teaspoons flour 2 + 1 tablespoons butter 1 teaspoon fresh thyme 2 teaspoons red chilli flakes 1 teaspoon dried oregano ¾ cup whole milk 1 pinch nutmeg powder 1.5 cups cheddar + mozzarella cheese Salt and pepper, to taste

Heat two tablespoons of butter in a pan and add the garlic.

Once it turns aromatic, add the thyme, oregano, red chilli flakes and let them bloom.

Add the mushrooms and cook on a high flame until they begin to shrivel and turn glossy.

Turn off the heat and transfer them to a plate and heat the remaining butter in the same pan.

Add the flour and allow it to sauté for a minute or two, before adding in the milk and stirring constantly until the lumps dissolve.

Add the nutmeg and season generously with salt and pepper.

Once the sauce thickens slightly, add the cheese followed by the cooked pasta and mushrooms.
