The Onam Sadhya, or Onsadaya as it is known, is a beautiful multi-course meal with a host of vegetarian dishes, each one as beautifully complex or simple as the other. The beauty of the flavours lies in the fresh ingredients used, the spices and the way they are cooked. Here are a few Onam sadhya dishes to make at home:
This Kerala-style Sambar is a classic item made with roasted rich spices, coconut shavings, vegetables and lentils cooked in coconut oil and Sambar Masala.
A dry mixed vegetable dish made with carrots, beans, urad dal, green chillies and coconut oil, Thoran can be paired with steamed rice and sambar for the ultimate soulful taste.
A dry curry made with Pumpkin cubes, mixed with coconut, masala, urad dal, curry leaves and mustard seeds. Best enjoyed with steamed rice and sambar.
A sweet and tangy chutney made with tamarind, ginger, green chillies, jaggery and curry leaves.
A sweet delicacy made with rice ada, sugar, ghee, and milk, topped with cashews and raisins, this simple sweet item is very similar to the North-Indian kheer.
A wholesome Kerala-style tadka dal made with split moong dal, ground coconut, spices and curry leaves.
Another yoghurt-based dish, Kalan, is a traditional Kerala dish made with coconut, yam, raw plantain and banana, and spices like turmeric, garam masala, and fennel seeds.
