Payasam is a traditional sweet that is made on festive occasions. On Onam it’s a special part of the Sadhya. It is cooked with milk, rice, and jaggery, often flavoured with cardamom and garnished with ghee-fried cashews and raisins.
1/4 cup rice 4 cups milk 1/2 cup jaggery (grated) 2 tbsp ghee 10-12 cashews 10-12 raisins 1/4 tsp cardamom powder Water
Rinse the rice and cook it in 1 cup of water until soft.
In a separate heavy-bottomed pan, bring the milk to a boil. Once boiled, reduce the heat and let it simmer until the milk reduces slightly.
Add the cooked rice to the milk and stir well. Let it simmer for 5-7 minutes.
Add the grated jaggery, and stir well until it dissolves completely. Let it cook for another 5 minutes.
Add cardamom powder for extra flavour. In a small pan, heat ghee and fry the cashews until golden brown, followed by the raisins.
