Banana chips are a crispy, savoury snack made from thinly sliced raw bananas, fried to perfection. A staple in Kerala, they are also an essential part of the traditional Onam Sadya feast. They add the right amount of crunch to the elaborate vegetarian spread.
4 raw bananas 1/2 tsp turmeric powder Salt Oil Water
Peel the raw bananas and slice them thinly using a mandoline or sharp knife. Try to maintain even thickness for uniform frying.
In a bowl, mix turmeric powder, salt, and water. Soak the banana slices in this water for 5 minutes to enhance colour and flavour. Drain and pat dry.
Heat oil in a deep pan or kadai over medium heat.
Once the oil is hot, drop the banana slices in batches. Fry until they turn crispy and golden, stirring occasionally to avoid sticking.
Remove the chips with a slotted spoon and place them on a paper towel to drain excess oil.
Once cooled, store the banana chips in an airtight container for freshness.
