2 cups pineapple 1 cup water 1 tsp salt 1/2 tsp turmeric powder 1/2 cup grated coconut 1 green chili ½ inch ginger 1/2 tsp cumin seeds ½ tsp mustard seeds 4 garlic cloves 2 tbsp jaggery ½ cup whisked yogurt

For Tadka 1 tbsp coconut Oil 1 tsp mustard Seeds 3 dry red chilies Handful of curry leaves

In a pan, add pineapple, turmeric powder, salt and water. Let it cook for 20 -25 minutes.

Blend coconut, green chili, cumin seeds, mustard seeds ginger and garlic for a smooth paste. Add little water.

Add the blend into the pineapple curry and let it cook for 3 more minutes. Add jaggery and cook.

When done, turn off the flame and let pineapple cool down properly. Then, add whisked curd and mix well.

Heat oil in a pan and add mustard seeds. Add curry leaves, dry red chilies and make a tadka.

Pour the tadka over the prepared pineapple pachadi and serve!
