A mildly-spiced curry made with ash gourd and karamani (cow peas), the Olan is a key dish that features on the elaborate Sadya; also being a simple curry you can recreate at home.

1 cup ash gourd, chopped ½ cup cooked cow peas 1.5 cups coconut milk 2 green chillies, slit 5-6 curry leaves 1 tablespoon coconut oil 1 teaspoon mustard seeds Salt, to taste

Heat the coconut oil in a pan and temper the mustard seeds, curry leaves and green chillies.

Add the chopped ash gourd into the pan and sauté for a couple of minutes.
Season with salt, add the coconut milk and cooked cow peas and mix well.

Allow the mixture to simmer for 7-8 minutes and adjust seasoning, if necessary. Serve warm.
