Onam 2023 - Celebrate With Sarkara Varatti Plantain Coated In Jaggery

Everyone loves munching on crunchy sarkkaravaratty and plantain chips especially during Onam season. It is easy to make sarkkaravaratty at home which tastes as tasty as the one bought from outside. Here we’ll share the recipe of sarkkaravaratty which can be easily made at home.

Ingredients

Plantains as required (peeled and soaked in water for 15 mins, cut them in the size of sarkkaravaratty) Jaggery   Coconut Oil 2 tbsp sugar Cardamom powder Dried ginger powder

Step 1 

Heat the coconut oil in a thick-bottomed vessel. Add the plantain and stir occassionally on low flame.

Step 2 

Notice that if the plantain has become crunchy sprinkle some water which will help the plantain to get cooked easily.

Step 3 

Melt the jaggery with water on low flame. Add sugar to the syrup.

Step 4 

In the syrup add cardamom powder and dried ginger powder.

Step 5

Now add the fried plantain pieces. Mix well.

Step 6 

The jaggery sticks onto the plantain as the syrup gets cooled. Thus, keep stirring the plantain in jaggery to make them crispy and not sticky.
