Celebrate Summer Cucumbers With Authentic South Indian Vellarikka Pachadi

Summer is the time when most people love to indulge in cucumber dishes to keep themselves cool. This dish Vellarika Pachadi from Kerala does just that and is very common among the Malayalis to have with their feast. Know how to make this recipe: 

Ingredients

1 and 1/2 cups cucumber chopped roughly 1 cup thick curd salt to taste 1/4 cup grated coconut 1/4 teaspoon jeera 1/4 teaspoon mustard seeds 1 green chilli 2 teaspoon coconut oil 1/4 teaspoon mustard seeds 1 red chilli a small sprig curry leaves 

Step 1 

Wash cucumber, peel off the skin. Chop them into bite sized cubes. 

Step 2 

Whisk curd to make it smooth and creamy, set aside.

Step 3 

Grind together the ingredients namely gated coconut, jeera, mustard seeds and green chilli 

Step 4 

The mixture should be thick and slightly coarse. Add chopped cucumber to kadai along with salt and water. 

Step 5

Cook for 5 mins until water is absorbed. Now add this coconut mixture.

Step 6

Mix well and cook until raw smell leaves may be for 3-5 mins. Switch off and remove from flame and set aside. 

Step 7

To prepare tadka heat coconut oil. Add mustard seeds, red chilli and curry leaves. Now add this tadka along with curd to cucumber and mix well. 

Step 8

Serve Vellarikka Pachadi on the side of your regular meals.
