This robustly spiced curry is a simple but flavoursome accompaniment to ladle over your serving of rice or to pair with flatbreads. Make this quick and delicious curry for a satisfying lunch.
250 grams okra, chopped 250 grams shrimp, cleaned 1 onion, chopped 2 tomatoes, chopped 6 garlic cloves, minced 1 teaspoon red chilli powder 1 teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon granulated garlic 2 tablespoons vegetable oil ¼ teaspoon garam masala Salt and pepper, to taste
Heat the oil in a pan and sauté the onions and garlic until it turns aromatic.
Add the okra and continue to saute the mixture until the okra is partially cooked and softened.
Transfer the mixture to a bowl and set aside while you heat a bit more oil and add all the spice powders and tomatoes.
Once the tomatoes are cooked to a mush, add the okra mixture back and season with salt.
Add a quarter cup of water before tipping in the shrimp and add the black pepper, granulated garlic and garam masala.
Cook until the shrimp are tender but cooked through and turn off the heat.
Serve hot with rice.
