Poha is one of the go-to breakfast options in Indian kitchens. If you want to give it a healthier spin, you can make it with rolled oats and your favourite vegetables. Here’s a quick recipe you can follow.
1.5 cups rolled oats 1 tablespoon oil 2 tablespoons peanuts ½ teaspoon mustard seeds 10 curry leaves ¼ cup chopped onion ¼ cup peas ¼ cup chopped tomato ½ teaspoon turmeric powder ¼ teaspoon red chilli powder Salt to taste Lemon juice for garnishing
Rinse the rolled oats till they soften a bit and set them aside.
Heat some oil and saute mustard seeds, curry leaves, and chopped onion.
Mix in peas, chopped tomatoes, turmeric powder, salt, and red chilli powder.
When the tomatoes are soft, add rinsed oats and mix well.
Cook for about five minutes and garnish with roasted peanuts and lemon juice. Serve it hot.
